snippets of saturday, sunday











We woke up to snow on Saturday morning. Just not right for April, even though it's not a big surprise for our area. Hubby said it looked like powdered sugar on the pachysandra. It was the craziest weather day. We had bursts of snow and hail off and on all day, along with 50 mph winds that had its icy hands rattling the windows and gutters and clanging them against the house.

 Staying in on Saturday was a given. I actually dragged out some of my scrapbooking/journaling stuff. And the reason I say actually...I am terrible at making headway with this. It's hard for me to sit and concentrate on projects. I'm much more of an "up and doing things" kind of person. 

Had yummy food food going on all weekend:

Roasted pepitas make a tasty, nutritious snack. Just toss raw pepitas with a little extra-virgin olive oil, pure maple syrup, chili powder and cumin and toast in the oven at 350F for about 30 minutes, stirring every 10-15 minutes.

Made a VEGGIE CURRY for dinner - delish over rice.

Sunday morning blueberry muffins...wheat and dairy free, no refined sugar:

BLUEBERRY MUFFINS
2 cups almond flour or almond meal (I used almond meal)
1/2 tsp baking soda
4 large eggs
4 T raw honey or pure maple syrup
1 tsp pure vanilla extract
1 tsp apple cider vinegar 
1-1/2 tsp cinnamon
Pinch sea salt
1 c frozen wild blueberries (NOTE: Do not thaw!)

Preheat oven to 350F. Mist a muffin tin with cooking spray. (Note: This recipe only makes 7 muffins.) 
In a large mixing bowl, whisk almond flour/meal and baking soda. In a medium bowl, whisk together eggs, honey or maple syrup, vanilla, vinegar, cinnamon and salt; pour into flour mixture and gently mix until combined. Fold in frozen blueberries.
Fill muffin cups about 3/4 full. Bake for 15 minutes until lightly golden.

Homecare (isn't that such a lovely word...so different than housework) included repotting some succulents and making a new vignette on the top of the dresser in my office/Phil's old room. 

There's always the sweet pleasure of sleeping kitties, curled up like commas and squeezed into their little beds.

  1. Sweet kitty has the right idea. Sometimes staying in weather is a wonderful thing when you have so much to keep you occupied. Your food looks good. I've yet to roast chickpeas which seems to be all the rage so must give that a go soon. When I saw that first photo on Instagram, I thought you had white flowers pop up all over your yard. A closer look and I realized it was powdered sugar. Ha! Have a wonderful week.

  2. I love this snippets post. I often don't know what to write about, but I have odd photos here and there that I could do a snippet post. I hope you don't mind my copying your idea.

    I read the articles you sent me on nightshades. We do eat tomatoes, but they aren't impossible to eliminate. Potatoes are more rare here, but I am going to eliminate them also. I copied the list to show to Steve so he can make a note of what herbs not to use in his cooking. We both suffer from arthritis so it is definitely worth a try.

  6. I love these little snippets of your life, Melanie! I'm curious if you read Dean Riddle's book yet....I just finished it again last night for the 15th time I think....and I enjoyed it every bit as the first time I ever read it, so many years ago! I'm ready to get out there and dig in the dirt now...if it wasn't for the snow. Oh well. Hey, did you have a bear get your garbage bins or is that how the garbage men throw them back at the house? :)

  8. I but out laughing at the garbage cans! It NEVER fails that when we have high winds it is NOT a day or two before pick-up, but rather when garbage has been picked up, cans are empty and rolling / flying all over the place. We've had gusty winds the last few days as well. Your recipes sound good / going to check out the veggie one, and that kitty looks so very sweet and contented :)

  11. You did have some pretty crazy weather over the weekend! It was really windy here on Saturday too. I had finally managed to plant a few veggies in my beds and those gusts of wind snapped the tops off of one or two tomato plants. I just love your sweet kitties!

  13. The kitty looks so sweet! That is what I've been wanting to do lately...nap. And it's spring and I should be doing all kinds of things! Like homecare. :) I do like that word so much better than housework!

  14. Before I scrolled down, I could see a bit of the first picture, and I thought you had something blooming. I couldn't imagine! Ah yes, the snow. Saturday was absolutely crazy -- snow, sun, snow, wind, you name it. My plants have looked a little shocked the last couple of mornings with those lows in the 20s. Brrrr. That's what we get for living in northern Illinois!

  15. Poor sweet girl, you have been so excited about warm weather and working in your yard. Snow and 50 mile an hour winds. I wish that I could have send you some of our weekend, it was perfect, no need for a jacket. It did get cold again on Monday and we had winds that made me hang onto my hat, but all is nice again now. Pass me one of those muffins, will you, LOL.

    I just printed out the blueberry muffin recipe and I will make them today. I have all the ingredients, so nice timing! I bet I picked up my garbage and recycling can 10 times on Saturday. Today is April 7th and the weather is the same. Tiny ice balls and gray sky, then sun, repeat, repeat, repeat! It's wacky.
