snowy monday

 
 




We got 4" of snow yesterday - just enough to make the landscaping pretty,
but also just enough where the roads were dangerously slick. And now the
temps have really dropped. We officially hit below zero tonight - it is now -1F.
I do not like cold weather. Knowing it's going to be like this for 2-1/2 more
months is depressing to me. I wish I could hibernate until March. At least we
have soup to warm us up. This bean and bacon soup was really good - 
hearty, tasty, and easy to make. It reminded me of a ham and bean soup,
though not as rich. I didn't have two cans of white beans ~ I had one can
of white beans and one can of pinto beans, so that's what I used. So use
whatever you have in your pantry. It's all good. But don't forego the fresh
rosemary if you can. I really think this added just the right touch to the soup.

  1. The soup sounds so good! I love bean soups with ham or bacon. We always have ham for Christmas and I'm looking forward to freezing the leftovers for bean soups over the winter months. It's really cold here now too, the storm came through on Thursday and Friday and left behind frigid temperatures!

  2. These are beautiful snow pictures (You left that gorgeous window outside? Aren't you afraid it will get damaged?). No slick roads here but the wind was really gusting and blowing up sprays of snow. I went shopping and really bundled up.

    I can't wait to make that soup, maybe tomorrow. Stay warm.

    1. You're right - I should probably put that window in the garage. Though I've left it out through the winter before and it's been fine. It weighs a ton...I think only a tornado could damage it! No sleep...boy, do I feel you on that one. I went to bed at 11:30 last night and was wide awake at 4:30.

  3. Oh, my! I don't think I would leave the house in that weather. I love to ski, but I don't think I could live in the snow.

    1. Unfortunately, I have to leave the house just about every day! Between errands, yoga, and physical therapy, I'm on the road a lot. Believe me, I'd much rather live where you do!

  4. I love making ham and vegetable and bean soup after Christmas with the bone, etc. Now you have me craving it :)

    You got more snow than we did here..we got about 2 inches though I see more is out there now..just a dusting so far this morning but who knows. ( Our weather guys have not gotten a prediction even remotely correct over the last month :)

    1. Wouldn't you know it - it's snowing again as I type this. And more tomorrow! Usually it doesn't snow this much in December. This kind of weather is just perfect for soup though, isn't it?

  7. Melanie, those photos are beautiful! We've also been hit hard with freezing temps and snow. Good thing for 4-wheel drive :)

    I miss blogging but this just doesn't seem to be my "season" right now. Hopefully someday soon. I just couldn't let the holiday pass without wishing you a very Merry Christmas!! Big, big hugs.

  8. We got snow today - about 4". It was a nice day to stay home and do some Christmas things. Loved your outdoor shots! I've got butter coming to room temperature - need to bake some cookies to make the day more cozy.

  9. We got about 6" of snow over the weekend, and those terribly frigid windchills as well. Take heart, though, we're having a warm-up which means it'll soon come to you!

  10. Hi Melanie, your soup looks delicious and the snow pictures are very pretty. We have already had 2 snowfalls and have been below freezing since last week but it is supposed to start warming up today. You know, it is still Autumn. This may just be first of many cold spells as real winter moves in. It is a good thing we both like being at home.

    1. My physical therapist and I were saying that today...that technically it's still fall. Just wait until winter hits! I like being at home, but unfortunately am out and about just about every day between physical therapy, yoga, and normal errands.

  13. Okay, don't hate me, but I LOVE your snow, (or maybe just the pretty picture of it. Hmm. Have to think about that)! I have to admit, the first snowfall is always sweet and nostalgic and romantic, but then, it can get a little slushy and mushy and dirty! And, yes, the older I get, the less I tend to romanticize snow, (having lived the cold last year for three months in Toronto), but it's still difficult to do when you are a Canadian expat, living in the Mediterranean! Despite this, iIt's been very cold here for the past 4 days, with hail and wind storms and NO HEATING in the house, except for a fireplace, as the suppliers have hiked up the price of oil and thousands of households are making do with other means. It's 44 °F here today, and that's cold for Crete!

    Your bean soup looks delicious, love that it's infused with the scent of fresh rosemary, nothing compares to fresh herbs!
