to your good health!

Those of you who follow me on Instagram have probably figured out from all my food photos that I'm not just into cooking and food, but healthy eating as well. I've talked a little bit here on my blog over the past few years about healthy eating and living, but I've gotten requests for sharing my knowledge of these subjects in regular blog posts. Healthy foods and eating are such broad subjects, that I'm hoping to do posts on individual subjects at least a few times a month. For right now, I'm just going to dive into some basics and give you a few healthy, simple recipes. These are things anyone can make. No cooking talent required!

I can tell you this much for sure: whatever you put in your mouth has almost everything to do with your health. You eat garbage, you're going to feel like garbage and your health is going suffer. "At least 80% of how you look and feel comes from your diet" (Dr Samantha Durland). You truly are what you eat. Thus said, I am far from perfect. Healthy eating is something I work on and strive for every single day. Some days I don't do as well as others. I try not to beat myself up over that. Instead, I start anew the next day.


I found a new family care physician through a friend whom I went to last week. He does some holistic care and is very much into working with the patient on a healthy lifestyle. He spent 45 minutes with me, actually talking to me and giving me healthy suggestions, and making me feel good about myself, my health and my future by the time I left. The only prescribed medication I was on was a miniscule dosage of Lisinopril for high blood pressure. I had been on it since I was 38 years old: 19 years!! I originally started out on 10 mg, but I was much heavier when I was younger. Over the years as I adopted a healthier lifestyle and lost weight, I was able to decrease my dosage of medication. I had asked my former PCP the past few years if I could go off the Lisinopril and she always said no - even though my blood pressure was always normal. This new doctor took me off the medication! My blood pressure in two different readings was low and then average. He said, "You don't need this medication." He said that if I continue to eat even healthier (i.e., more plant-based meals, less cheese) and exercise more, that everything will naturally fall into place...lower blood pressure, lower cholesterol (mine's pretty good, but could use some improvement), lower blood sugar levels (again, mine's good but wouldn't hurt to be lower). He also explained to me that if for example, I had've come to him when I was 38 years old with high blood pressure, he would not have automatically put me on hypertension medication. He would've worked with me on lifestyle change instead. I can't tell you how refreshing it is to have found a doctor like this! And I can now announce that I am medication free. That feels so good!

I know some of you follow a vegetarian or vegan diet, and while I think that is fantastic, it is not for me. (I have a hard time digesting beans/legumes and I don't eat soy or soy products.) I am also not here to discuss the ethics of meat eaters versus plant eaters. I am only focusing on clean, healthy eating. 

Thus said, I am incorporating more vegetables and fruits into my diet and eating less meat. This doctor wanted me to eat beets for my blood pressure, but I told him I loathe beets. Beets and mushrooms are the only two vegetables I just cannot stand. So he told me I could buy beet root powder (I didn't even know there was such a thing!) and use it in my smoothies. I found this organic beet root powder on Amazon. I use a teaspoon in my morning smoothie and can barely taste it. In fact, I love the taste of my smoothie even more than I did before! And it makes the color very pretty. I make my smoothies by using 8 oz. unsweetened almond milk, a banana, some frozen organic fruit (I used blueberries in the smoothie shown below), 1 tsp. of the organic beet root powder, about 1 T. of hemp hearts/seeds, a sprinkle of turmeric (great for inflammation!), a spoon of organic, natural peanut butter (make sure the peanut butter you use doesn't have any added sugar and doesn't have any hydrogenated oils in it...you want to eat a peanut butter that is just that - peanut butter - and nothing else...except salt, if you want the salted kind), and a big handful of organic baby spinach.


Another healthy, simple meal idea is to top toast (please don't use processed white bread; use a bread where the first ingredients are whole grains...Ezekiel Bread or Dave's Killer Bread are excellent choices) with mashed avocado (I added fresh lemon juice, salt and pepper to mine) and top with a cooked egg. This will fill you up for hours. If you're vegan or don't like eggs, avocado toast on its own is delicious. You can sprinkle the avocado with nuts, sunflower seeds or pepitas, or even some pomegranate seeds.


I'll throw in one more quick, healthy meal idea that anyone can make...when you're craving pizza, it's much healthier to make your own at home. This is something I struggle with. Pizza is one of my favorite foods! And I live in the Chicago area, so we have THE best pizza.

Make your own pizza crust, or use a prepared one. Just make sure it has minimal ingredients and no hydrogenated oils (such as soybean) or preservatives in it. The one pitfall of this type of bread is that it is high in sodium. So even pizza at home should be a special treat. Most people don't realize that bread contains a lot of sodium!

Brush your pizza crust with extra-virgin olive oil or tomato sauce seasoned with herbs. Then load on the vegetables. I sauteed my vegetables just a couple of minutes before putting them on the pizza so that they wouldn't be TOO crunchy. I used red peppers, broccoli and red onion. You could also use fresh tomatoes, mushrooms, spinach and/or jalapenos. To do as the good doc said about cutting down on the cheese, I used fresh mozzarella sparingly. Bake at 400 degrees until done. My pizza took about 10 minutes.

a gentler way to start your day

I haven't posted since last week because I've had a lot on my mind. Between my own busyness and happenings and then all the tragedy going on in the world at once ~ Hurricane Harvey, the earthquake in Mexico, and now Hurricane Irma ~ I've felt unsettled. As an introvert and someone who also has anxiety, I tend to ruminate and over-think things. So when I'm feeling like the world is simply too much, I purposely try and create more calmness and peace in my life.


 During this time I was scrolling through Instagram and Jennifer at The Cottage Nest wrote that she was making time to start her day off on a positive, technology free note. She said, "there's stretching, gratitude journaling, encouraging reading and aromatherapy all before I even roll out of bed - a much gentler way to begin my days."

Interestingly enough, I had been thinking along the same lines for awhile now - but not taking action. Seeing Jennifer's post gave me the little push that I needed. While I do have to get out of bed right away when I wake up as I'm the one who feeds the cats, I've first been taking a minute to at least stretch my body before I start opening the blinds around the house and heading to the kitchen.


My morning routine after feeding the cats and making coffee was that I opened the front door to let the sun in (a good thing!), but then opened my laptop and read my email and looked through social media. (By the way, that's a cat toy in the sunbeam, not a dead mouse. 😉)


The past few days instead of turning on my laptop, I've been reading something light and positive. Whether you choose to read poetry, an uplifting book, your Bible, etc., it sure beats starting out your day being bombarded by email and social media. Sometimes I light a grapefruit-scented candle that I have on my coffee table.


I then roll out my yoga mat in the sunbeam (the cats get miffed - they love the morning sunbeam, too!) and do gentle stretches for my back and knee and a few rounds of sun salutations. 


Of course, I'm not able to do this slow, gentle routine every morning. Sometimes there's appointments where I need to rush and get out the door. Maybe you work outside the home and are also rushed with your morning routine. However, anyone (even me - who hates getting up any earlier than I have to) can get up just a mere five minutes earlier and at least stretch a little and then maybe sit and be still and set some positive affirmations for the day.


I have found that this slower paced, gentle way of starting the day has already made a difference in my mood and starts my day off on a positive note. 

 

Once you've gently started your day and are ready for breakfast, it's important to fuel your body with something healthy. Your body has fasted 10-12+ hours, so breakfast is a must. Most mornings, my breakfast is a nutritious smoothie, which only takes a couple of minutes to make. Simply layer in the blender: water or milk (I use Silk Almond-Coconut milk), frozen fruit (I like a berry blend), a banana (or 1/2 avocado), a few fresh strawberries or small handful of blueberries or raspberries, a sprinkling of turmeric, 1 T. of hemp hearts, a big spoon of plain Greek yogurt (don't use the flavored yogurts which are loaded with sugar or artificial sweeteners), and a big handful of baby spinach. Use organic ingredients with the fruits, veggies and cow's milk, if that's what you're using for liquid.

slice of life mid-june

Most every morning, especially when the weather is hot, my breakfast is a nutritious, filling and delicious smoothie. I simply throw these ingredients into the blender in this order: enough Silk Unsweetened Almond-Coconut milk just to cover the blades, about a cup of organic frozen mixed fruit, a banana, a dollop of unsweetened plain Greek yogurt, a tablespoon of hemp hearts, a sprinkling of turmeric, and a handful of organic baby spinach. Takes only a few minutes to make and you could even pour this into a portable drink container to take in your car if you're going to work or an appointment, etc. in the morning. You can easily mix this up with different fruits, kale instead of spinach, add some flaxseed meal instead of hemp hearts (or, use both), or even put in a little unsweetened organic coconut for a tropical taste.

We attended the wedding of my friend's daughter last weekend. They made their own table decorations, which I thought were really pretty.


The wedding and reception was held at a nearby venue right on this gorgeous lake. One thing I love about the area I live is the many lakes.


This ginger kitty had been hanging around our house the past few weeks, driving my cats nuts when they saw him through the windows. I think he belongs to someone on the street in back of us, because he'd always run through the arborvitaes in the back yard to get to the houses behind us. With the weather being in the 90's this past week, I haven't seen him, so I hope that means the owners are keeping him inside. Which they should be doing all the time, anyway. 


All my plants are really taking off...
I can't believe how huge this red-veined sorrel got since last year. It was just a tiny plant when I bought it. It's also flowering now, which is kind of pretty. I'm not sure whether to leave it like this, or if I should cut this growth off. If it means those little buds are going to fall off and self-seed, then I suppose I should cut them. 


My Kentucky Pole Bean plant is growing about an inch every day now! I'm sure it won't be long before the pods start forming on the vines. You might recall from a previous post, that this "trellis" is actually my boy's crib springs. :-)


The cherry tomato plants are growing like crazy now, too.


And, the hostas! We have them all around our house, but this one astounds me every year with how huge it is. We've even divided it several times already.

The tiger lilies in our front ditch have just started to bloom. They're such a pretty filler for an unsightly area, but once the blooms fade, the plant itself isn't far behind and then they look scrappy. That's the downfall to tiger lilies, but oh well. We enjoy them while they last.


Guess what else is in bloom now? Mulberries! Our mean next door neighbor has two huge mulberry trees on her property, one of which hangs directly over the south side of our house. That's where we have a lot of nice perennials, potted plants, and the patio. We just had her trees trimmed last month (and that was an ugly, horrendous story in itself) but still, these disgusting mulberries drop all over our patio. And the patio furniture. And all over the perennial beds. And into plant pots. They stink and attract flies. So, every day I'm out there sweeping up these mushy berries. I also had to move the two rocking chairs up against the house to protect them from the mulberries. I'd also love to get an outdoor rug for the patio, but it would get ruined.

what to eat when it's too hot to cook ~ three healthy recipes

 It's not officially summer yet, but the temperature is saying otherwise: in the 90's and humid today and tomorrow. I don't know about you, but when the weather is this hot, I certainly don't feel like eating hot, heavy food. Light and healthy is the way to go. 

A smoothie always hits the spot for breakfast or a snack. One thing I love about smoothies is that they're so versatile. You don't have spinach; use kale. Out of strawberries; use raspberries or blueberries. Need some protein in your smoothie? Add a tablespoon of peanut butter or almond butter. Here's my basic recipe.

In a blender, add the following in this order:

1/2 cup unsweetened almond milk
1-1/2 cups cold water
1 cup organic frozen fruit (I used a triple berry mix)
1/2 - 1 banana (depending on how thick you like your smoothie)
1 handful organic baby spinach (or kale)
1/2 tablespoon each flaxmeal and hemp seed (you can also add chia seeds)
1 tablespoon organic unsweetened coconut
1 teaspoon pure vanilla extract

Give it a whirl...


Stick a straw in your drink, sit outside in the shade, and enjoy.


Rice bowls are popular these days and I can see why. They're adaptable, easy to make, healthy, and visually appealing. I made this taco bowl the other night and hubby went back for thirds. ;-) OK, maybe I should call this a taco plate because I didn't have a big enough bowl! Starting from the left: romaine, radishes, black olives, scallions, fresh cilantro, halved cherry tomatoes, cooked organic, grass-fed beef with taco seasoning, cooked brown rice. The "sauce" you see on top of the romaine is guacamole (make your own or buy prepared) mixed with a little plain Greek yogurt. So, how do you eat this? Anyway you want! You can be messy and mix it all together, or you can dip your fork into the creamy sauce, then into the veggies and beef and work your way around the plate in random order. There's no correct way to eat a rice bowl! This is a great way to get a lot of veggies into your diet, too. Meat should be the accompaniment, with the veggies being the star of the show. For a vegetarian option - or a no-cook option - substitute black beans for the ground beef.


I'm not a dessert eater and I also don't eat processed sugar anymore, but sometimes in the hot weather I crave ice cream. So, I make my own "nice cream" in the blender! This chocolate recipe definitely hits the spot.

CHOCOLATE PUDDING NICE CREAM
One avocado
A few chunks frozen banana (slice ahead of time and keep in freezer)
2 tablespoons unsweetened cocoa powder
1 teaspoon pure vanilla extract
1-2 tablespoons pure maple syrup (according to your taste)
Enough unsweetened almond milk to blend smooth (according to your blender)

Put all ingredients in blender and blend until smooth and creamy. Eat as is, or top with fresh berries or chopped nuts. A friend of mine asked the other day if this tastes like avocado and I told her no - you would never even know this has avocado in it. All the avocado does is make the mixture smooth and creamy.
