comfort food

The weather is turning cooler and you know what that means: warm, belly-filling comfort food!

How about a bowl of chicken and bean chili with a dollop of Greek yogurt...


Rigatoni with a ton of cheese for a picky teenager who doesn't like beans in his chili...


And the makings of enchiladas: saute peppers and onions...


Add some cooked rotisserie chicken, chili powder, and cumin...


Put the filling in tortillas, roll up, place in baking dish, cover with enchilada sauce, and sprinkle liberally with shredded cheese...


Bake at 350 degrees F for 1/2 hour...nummy!

  4. Me! I'm hungry! I love enchiladas and make them frequently. I add cream cheese to the chicken mixture - it makes the insides nice a creamy. Everything looks just delish -yay for fall and comfort food!

  5. I don't see an email to answer your question that you left on my blog. But yes, I did use wallpaper on the backs of my bookcases. I also use wrapping paper and scrapbook paper.
